Bhojohori Manna
Unknowingly, five of us decided to open a restaurant some nine years ago. May be passion for good food drove me into proposing this business to my friends and we all were sure it had to be in simple style. Good Bangla Cuisine. May be, all of us knew what Bengali food looked or taste. So all of us agreed to the basic, not really knowing that Bengali cuisine reinvented could create a silent revaluation in the food map of Kolkata.
I chose the name since that was the only name where there was a quick recall value in terms of food. The Manna Dey song had an element of nostalgia with the Bengali as such. The beginning was experimenting with a small garage space at Ekdalia, Ballygunge, Kolkata which was taken on rent from an owner earlier running a snack bar. We did not have a formal kitchen and trained chef. We did trials with a ‘randhuni’ over extended period of two months but the trial failed while the opening of the restaurant was finalised. A last minute reshuffle of the cook led to the birth of Bhojohori- We all were sure that we will serve good food. We did not advertise (we did not have the urge to spend since the whole exercise was an experiment itself) but got the shop opened one fine morning. We also relied on the fact that the place Ekdalia, which is close to Asia’s largest school South Point, had a large footfall of mothers during the day waiting to pick up their children who will definitely visit our restaurants. That did not really happen. But definitely the visibility of our presence in front of their eyes did the advertisement by word of mouth. Initially curiosity made passers by enter our hole and try our simple food. Definitely simplicity appealed. The words spread around and saw more footfalls. The press, largely responsible for our success, chipped in. My own presence in the film & TV world, the association of Goutam Ghosh as a renowned film director and a great foody himself, helped the press to create stories on Bhojo in an appropriate manner. This was a time when customers took notice of this tiny silent revolution and joined in our endeavor to promote Bengali cuisine. Rest is history. More about us at www.bhojohorimanna.com
A little more about our vision of . We are first generation, entrepreneurs in the field of food and do not have formal education in this profession. However it seems we have acquired good working knowledge with more than 9 outlets in West Bengal, 1 in Bengaluru and now coming up in Mumbai. All this has happened through experiments and joint partnerships with like minded friends. We would continue to do so.
